Our current winter soup obsession is this white bean escarole soup with sausage. This Italian classic really delivers on a cold, rainy day. Serve with a drizzle of olive oil and some freshly grated parmigiano. 1 lb sausage, casings removed 1 small head escarole, coarsely chopped 4 garlic cloves, sliced thin 1 onion, chopped 2 carrots, sliced 1 parmigiano rind (if you have it) 2 cups cooked white beans* 4 cups chicken or vegetable broth Olive oil 1/4 cup chopped parsley In a large heavy pot or dutch oven, cook sausage, breaking it up with the back of the spoon. Remove sausage & set aside. Add 2-3 tbsp olive oil to the same pot and sautee the onions, garlic & carrots until tender, about 5 minutes. Add the stock & rind, deglazing the pan. Add the beans, cooked sausage, escarole and parsley. Season to taste with salt & pepper. Simmer until the escarole is tender.
